This knife undergoes a meticulous process of vacuum heat treatment followed by nitrogen cryogenic tempering, ensuring unparalleled strength and longevity.

This Santoku knife is crafted with a VG-10 steel core, noted for its remarkable durability and high hardness of 62HRC. The steel undergoes a 2100°F vacuum heat treatment along with nitrogen cryogenic tempering to achieve superior toughness and lifetime durability.

Unique Granton Edge Design. Forged multiple times, this knife features a distinctive and naturally formed cast texture. Its special grooved design minimizes the contact area between the food and the blade. This reduces food sticking and maximizes slicing efficiency with every cut.

Expert blacksmiths employ the traditional Honbazuke method to hand-sharpen the blade to a fine 15° angle on each side. Tested for sharpness levels of 6-8 N, it guarantees an ultra-sharp, effortless slicing experience.

The handle of the knife is crafted from ultra-premium G-10 material, which wraps seamlessly around the knife’s tang. I've been using a Wusthof chef's knife for a few years and it was my natural selection for everyday veggie chopping. This santoku is giving it serious competition. The blade is a but more steamlined for veggie chopping. I pretty much prepped a whole Watermelon with no force using this knife.

  • What is the best way to clean and maintain my Okingjoy knife?
    Hand wash only. NOT DISHWASHER SAFE. After every use, hand clean with warm soapy water and dry with a towel. Avoid leaving the blades wet and always wipe dry after washing. These blades contain high levels of carbon which can lead to rust spots. However high carbon blades are EXTREMELY sharp. So be careful!

    To clean and maintain your knife, it is best to follow these steps: First, clean the blade with warm water and dish soap. Be sure to rinse and dry the blade well to prevent it from rusting. Then use a sharpening steel to sharpen the blade.

  • How to sharpen an Okingjoy knife?

  • What is Damascus steel?
    The origin of the name "Damascus steel" is controversial: two Islamic scholars, Al-Kindi and Al-Biruni (c. 800-873 CE), both wrote about swords and sword steels based on the appearance, the geographical location of where they were produced or forged, or the name of the blacksmith.
